Chrisopigi olive paste is made exclusively from Koroneiki olives, cultivated in the region of Sitia, Crete, a PDO (Protected Designation of Origin) area known for its rich olive-growing tradition.
The olives are harvested early, while still green (agoureles), to ensure they retain their full content of polyphenols — powerful natural antioxidants proven to offer health benefits, including anti-inflammatory and heart-protective effects.
After harvesting, the olives are placed in natural brine (just water and salt) for at least 6 months, allowing them to ferment and develop their deep, authentic flavor before being blended into a smooth, rich paste.
