Chrisopigi olive paste is produced exclusively from the Koroneiki variety, cultivated in Sitia, Lasithi, a P.D.O. region with a long tradition in producing high-quality olive oil and olive products.
The olives are harvested early, meaning at a preliminary stage of ripening, retaining a high content of polyphenols – powerful natural antioxidants with documented health benefits, such as anti-inflammatory and cardioprotective action.
After harvesting, they are kept in a natural brine (only water and salt) for at least 6 months to undergo natural fermentation and develop their rich, authentic character before being mashed into a velvety, 100% natural paste.
